@mastiffrex : My comment was if you are concerned about sanitary food prep and storage...... Louisiana home cooks are not where you want to be. Born and raised in Louisiana (south of I12) and have eaten many dishes with mystery meat and stiff that has been sitting out way passed what the USDA recommends. no problem. If the gumbo starts bubbling without the fire on,,,, don't eat it.
