Roast them with a little bit of olive oil, salt and pepper. Throw in some sweet potato … yummy Or take beets, cucumber and onion with salt and pepper, olive oil and red wine vinegar and refrigerate over night My favorite is just canned beets cooked with butter over mashed potatoes.

Fresh beets and pickled beets are good. Canned beets are bitter to me.

Pickled are amazing. I also like sliced beets sautéed in butter.

@Amanda79 : We love beets in our house. Well most of us, but the one hold out hasn't gotten his taste for them but he will. When the DH and I got married he was solid he hated them, marriage convinced him otherwise.
