I meant to post this last night, but I was too tired. Had to get up early for work today. So we ended up having homemade spinach and beef cannelloni, (with homemade marinara sauce, homemade pasta and a homemade béchamel sauce), spinach salad with fresh buffalo mozzarella and avocado, and HEB asiago garlic bread for dinner. Dessert was a homemade red velvet cake with cream cheese icing. And we had Mojito's to drink. Good times.

Where did you find buffalo mozzarella?? I've never seen it in any local stores!

@Weathergirl5 : Oh...I don't think that's buffalo mozzarella (made from Mediterranean buffalo milk). Just regular fresh mozzarella (which I also love!). Buffalo is pretty hard to find outside of online ($$$) and fancy Italian restaurants. I got all excited! If I'm wrong, lmk and I'll be leaving skid marks to HEB! 😃

Also, now you have me craving cannelloni!

@brightlights : Ok so you were right. I went and dug the container out of the recycle. It was fresh mozzarella (I typed in Buffalo fresh mozzarella when I placed the order). I guess I did not read the description that closely. It was very good though!

I love fresh mozzarella. Always keep a couple of tubs of the pearls in the fridge. My youngest likes to dump some in a bowl, crack some sea salt and some torn basil leaves on them, then drizzle with olive oil and balsamic glaze over the top. We just eat it with a fork!
