I made Veg beef soup last week . We don't have winter meals & summer meals .We eat Soup & gumbo , Chili , & such all year long . Maybe that's because these are cheap meals that you can make HUGE amounts of & freeze A bunch of it for when you either don't want to cook or can't because you have other things going on . I use to make all different kinds of corn bread & freeze in serving size for our grand kids snacks instead of giving them junk .
Here is my Cheese soup recipe I got in 1973 from a friend . Grate 2 stalks of celery & 3 carrots .Add 1/2 cup of chopped up onion real fine . Saute in 1/2 a stick of oleo . But I use butter instead of the Oleo & then add 1/4 Cup cornstarch & 1/4 teaspoon soda .
Add 1 cup cream of mushroom soup & 1 cup cream of chicken soup , & 6 chicken bouillon cubes dissolved in 1 cup water . 5 more cups water, 2 cups milk . Add 1/2 pound Velveeta cheese , cubed .
Cook in a NON STICK pot on a LOW temperature for about 30 to 40 minutes . Really good ,
