Tonight's Dinner
Trying out a new recipe tonight. Herbed Shrimp and Pasta Casserole. It is a recipe from the cookbookTrim & Terrific by Holly Clegg. Almost any recipe from her cookbooks is likely to be a hit. It uses 1 egg white an 1 egg, evaporated skimmed milk, nonfat yogurt, Italian seasonings, shrimp, salsa, mozzarella cheese and angel hair pasta. You mix all ingredients togehter except shrimp, cheese, salsa, and pasta. Spread cooked pasta in casserole dish and cover with salsa. Layer 1/2 of shrimp over the salsa. Spread remaining pasta over shrimp. Pour egg mixture evenly over pasta and top with remaining shrimp and mozzarella. Bake uncovered 30 minutes or until shrimp are done and liquid is absorbed. Remove from oven and let stand 10 minutes. I'll let y'all know if it is any good. At least it is easy. I'm always down for easy.

Just spaghetti and homemade meatballs, garlic bread and salad. I made two different ice cream pies.

Dinner here was prepared by DH as usual. Teriyaki Salmon with Rice Pilaf and peas. Simple, quick and the oven doesn't stay on for long. Delicious!

The recipe came out great. Dh loved it. I would use more shrimp next time. I will definitely do this one again.
